| Predictive microbiology – practical applications

| Studies on the effects of environmental factors and technological processes on behavior of microorganisms in food have been conducted since many years. For quantitative interpretation the results, mathematical models have been used extensively. The use of modeling in food microbiology has grown to the point of being recognized as a distinct discipline of food microbiology, termed predictive microbiology. In the last years, the progress in predictive microbiology has been impressive and it is commonly used in routine work of food producers and food inspections. One of the reasons for that there are changes in European food law, particularly obligatory introduction of HACCP, risk analysis and microbiological criteria for food. Predictive microbiology has been important supporting tool in food chain risk management.
